PENNE WITH MUSHROOMS AND PANCETTA

Ingredients: 50gr. dried porcini mushrooms

1 small onion, chopped

100gr.pancetta

2 garlic cloves

salt and pepper

2 tablespoons extra virgin olive oil

2 tablespoons dry white wine

 

Soak the mushrooms overnight, drain well and shred. Add the pancetta, oil, garlic and onion together into a frying pan: sautÈ until the pancetta is crispy. Add the mushrooms and cook over a low heat for 30 minutes. The final touch: pour the wine into the pan and increase the heat until evaporated. Cook the penne, drain well and place into a serving bowl; pouring the hot sauce over it and toss well. Be inspired by our Great Poet!
