Rice with truffle Pisa style

 

Ingredients: Rice

Olive oil

Onion

Prozsecco

Parmesan cheese

white truffle

 

Brown one finely chopped onion in first quality olive oil.

Add rice, stir and sprinkle with a good quality prosecco (a white sparkling wine from Veneto; translator's comment). Let it evaporate and continue cooking pouring some cups of good meat stock little by little.

Cooking time is about 17 minutes.

Blend the rice with butter and Parmesan cheese.

Put thin slices of white truffle on top and serve immediately.
